Take one sentence from your video and try both versions. Make a simple caption and an animated one for the same moment. Then watch them on your phone at normal size, not on a large monitor.
Ask yourself one question: does the highlight help the viewer understand the key word, or does it just add movement? If the answer is movement, the animation is not doing any work.
If there is already a lot happening in the picture, calmer captions can create the balance the video needs. If the shot is a static talking person, a gentle highlight on part of a sentence can make sense. There is no need to animate every single word.
